RECIPE: ELDER FLOWER PANCAKES

A recipe for elderflower-scented pancakes, which can be used both freshly picked and dried. The flowers also have diaphoretic properties, therefore they are recommended in case of fever and inflammation of the respiratory system.

INGREDIENTS

  • 300 g of flour 0
  • 70 g of raw cane sugar
  • ½ sachet (8 g) of baking powder
  • 400 g of soy milk or another milk of your choice
  • 50 g of sunflower oil
  • 8 tablespoons of elderflower (flowers only, no stems): fresh or dried
  • Maple syrup

METHOD

To prepare this recipe, pour the flour into a bowl with the brown sugar and baking powder and mix well. Then add the soy milk and sunflower oil and mix everything together until you get a smooth and not too liquid batter.

How to clean fresh Elderflowers?

Remove all the elderberry flowers from the stems and rinse them under running water in a tightly meshed colander, then add them to the pancake mixture and incorporate them gently.

How to cook pancakes?

Heat a non-stick pan and when it is hot pour a drop of seed oil, remove the excess with a piece of absorbent kitchen paper and pour a couple of tablespoons of dough for each pancake, even more if you prefer them larger.

Cook them for a few minutes over medium heat and when they start to form holes on the surface, turn them with the help of a spatula and cook the other side for a few more minutes.

Serve them still hot with maple syrup to taste and fresh seasonal fruit.

Excellent for a tasty and particular breakfast, a little different from usual.
