During the Christmas period it is not always easy to reconcile one's taste and the desire to keep the line .
These days we see ourselves surrounded by sweets of all kinds and it will undoubtedly happen to arrive at the days of the holidays having already tasted different ones. This does not necessarily have to preclude the sweetness of a dessert at the end of the Christmas lunch: however, for the well-being of the organism without giving up that of the taste buds, it is also possible to opt for the “ light ” versions.
Below you will learn how to prepare Christmas cupcakes with a coconut filling, easy to make but above all delicious and light.

Ingredients
For the base dough:
- 80 g of oatmeal
- 40 g of rice flour
- 20 g of bitter cocoa
- 220 g of egg white
- 100 g of low-fat Greek yogurt
- 4 g of baking powder
For the coconut filling:
- 200 g of lean ricotta
- 80 g of coconut flour
- 20 g of melted white chocolate
- 20 g of shredded coconut
- A spoonful of skim milk
- Honey or erythritol (1 tablespoon)
To decorate:
- Greek yogurt and red currant
Method
First prepare the coconut filling: add the coconut flour, the rapé coconut, the melted white chocolate with a tablespoon of milk and the ricotta. Add the honey or erythritol, put the mixture in the freezer for 20-30 minutes and then, when it is more solid, form balls with your hands which must then be kept in the refrigerator.
Prepare the cupcakes: Combine the egg white, oatmeal, cocoa, yogurt and baking powder, mixing thoroughly; transfer the mixture obtained into muffin molds filling them about 1/3, insert the previously prepared coconut balls into each one and cover with more dough, taking care to always remain under the edge of the mold.
Bake in a preheated oven at 180 ° C for 20 minutes. Cooking times may vary slightly depending on the oven, so it is advisable to check the cooking with a toothpick.
Remove from the oven, allow to cool and decorate with tufts of yogurt (it can be whipped with an electric whisk to give it a cream-like consistency) and currants.
If you want to give an even more Christmas touch to your cupcakes and amaze the diners, add a teaspoon of red natural food coloring to the base dough: the contrast with the white of the filling will be really effective .
