INGREDIENTS:

For the chocolate

METHOD:

  • Break up the chocolate bar and melt it in a bain-marie; for a more uniform liquefaction and a smooth and shiny surface of the chocolates, it is best to chop it into thin flakes and make sure that the temperature never exceeds 31 ° C; better to have a kitchen thermometer!

  • Always melt the milk chocolate in a bain-marie

  • Chop the almonds or walnuts in a mixer to obtain a medium-fine granulation flour, simply mix them with the melted milk chocolate; If you like to experiment with spicy flavors, you can add some chili powder or cinnamon.

  • Prepare the molds for the chocolates or, alternatively, those used to prepare the ice, brushing a first layer of melted dark chocolate inside each shape. Wait until it is completely dry and then brush a second layer, so as to form the shiny shell of the chocolates.

  • Then pour the mixture of the dried fruit and milk chocolate filling into molds brushed with fondant coccolato.
  • Add the melted dark chocolate on top with a teaspoon to close everything.

  • Leave to solidify for a couple of hours and remove them by gently beating the edge of the mold against the surface of the table covered with a cloth.
