Chia seeds can be an excellent substitute for eggs, in fact by immersing them in water they reach a very similar gelatinous consistency.
- 350 g of flour (with or without gluten).
- 130 g of whole cane sugar.
- 300 ml of vegetable milk.
- 100 ml of corn oil.
- 12 g of yeast.
- 2 tablespoons of Chia seeds.
- 6 tablespoons of water.
- 10 strawberries (or other seasonal fruit).
Pour the Chia seeds into 6 tablespoons of water, mix, cover the bowl and set the mixture aside.
Combine the flour and sugar. Add the vegetable milk, the oil and finally the yeast.
When the dough is well blended, you can add the Chia seed mixture.
Stir the mixture one last time and then pour it into a baking sheet lined with parchment paper.
Decorate the surface with chopped fruit or a sprinkle of cinnamon.
Put everything in a preheated oven at 175 ° and cook for 40-45 minutes. The last 10 minutes of cooking cover the cake with aluminum foil.
Remove from the oven, let cool and enjoy your vegan chia seed cake!
