THE RECIPE CORNER: VENUS RICE WITH PAPAYA AND SALMON

Venere rice with avocado, papaya and salmon is a fresh, summery and very healthy dish. For those who do not like fish, we recommend replacing it with chicken or other fruit of your choice.

Ingredients:

  • 200 gr. of black rice
  • 100 gr. of smoked salmon
  • 1 ripe avocado
  • 1 papaya
  • 2 teaspoons of oil
  • Lemon juice
  • Salt and pepper

The steps:

  • As a first step, boil the black rice. Drain it as soon as it is cooked, season it with oil and salt and let it cool.
  • Meanwhile, wash and dice the avocado and papaya pulp and sprinkle with a little lemon juice to prevent them from blackening.
  • Cut the salmon into cubes, add salt to taste and season with extra virgin olive oil.
  • Finally, mix all the fruit cubes together with the rice and salmon. Leave a couple of hours in the refrigerator.

The advice: add a handful of chopped pistachios!
