SOFT COOKIES OF PUMPKIN AND GINGER
- 350 g Mantuan pumpkin (peeled, chopped)
- 80 g of whole cane sugar
- 2 eggs

- 60 g of almond flour
- 40 g of peanut oil
- ½ teaspoon of cream of tartar.
- ½ teaspoon of baking soda.
- 1 pinch of ground cinnamon.

Steam the pumpkin (or boil in a little water) and reduce it to a smooth cream with an immersion blender.
