THE RECIPE CORNER: QUINOA AND LENTILS SOUP

The quinoa and lentil soup is a really easy recipe to make, ideal to be proposed also as a main dish accompanied by a portion of spinach.

Its cooking is very simple, only a quarter of an hour is enough. Before using it, it is advisable to rinse it under running cold water to remove the slight bitter taste that characterizes it.

Ingredients for two people:

  • 100 gr. quinoa
  • 100 gr. clean leeks
  • 100 gr. potatoes
  • 200 gr. boiled lentils
  • 1 lt. vegetable broth
  • 1 teaspoon of turmeric powder
  • pink pepper to taste

Slice the leek into slices and cut the peeled potatoes into cubes. Put everything in a saucepan and pour the hot vegetable broth. Bring to a boil and then allow 20 minutes of cooking.

Meanwhile, put the quinoa in a colander and rinse it under fresh running water.

After 20 minutes, add it to the saucepan with the vegetables.

Stir and cook for 5 minutes, then add the boiled lentils.

Continue cooking for another 15 minutes.

Add the turmeric, a grind of pink pepper.

Serve the dish hot and enjoy your meal!
