CRISPY SALTED CAKE WITH RICOTTA AND PUMPKIN SEEDS
- 1 ricotta of 200 g
- 700 g of boiled or steamed pumpkin
- Shortcrust pastry
- Turmeric 1 teaspoon
- Extra virgin olive oil
- Pumpkin seeds
Combine pumpkin, ricotta and turmeric, mixing until smooth. Salt and pepper to taste.
Arrange the shortcrust pastry in a 24 cm pan lined with baking paper.
Pour the pumpkin cream, sprinkle with breadcrumbs, arrange a handful of seeds, wet with a little oil and bake at 180 degrees for 20 minutes.
For the sweet tooth: add a few pieces of your favorite dark cheese to the cream!
