THE RECIPE CORNER: STUFFED ARTICHOKES

Artichokes are one of the best foods ideal for purifying the liver and intestines .

The artichoke is not really a vegetable, but a flower; rich in water, vitamins , mineral salts (potassium, iron, phosphorus, calcium, magnesium ) and antioxidants.

It is a versatile food that allows you to create many recipes.

Ingredients for 4 people):

  • 6 medium artichokes
  • 3 red onions
  • green olives
  • 1 bunch of parsley
  • extra virgin olive oil to taste
  • 1/2 glass of white wine
  • Salt to taste
  • pepper as needed
  • pine nuts to taste
  • a can of natural tuna

METHOD

First peel the onions, cut them in half and slice them thinly. Brown the onions with the olives in a large saucepan over medium heat. When they are ready, leave them aside.

In the meantime, clean the artichokes by removing the stem, soak them in a bowl of water with the lemon juice and season the warm onion with the chopped parsley, salt and pepper.

Drain the artichokes and stuff them with onions, olives and pine nuts and sprinkle with wine and a drizzle of oil. If desired, you can add natural tuna to the flavored mince.

Bake in a preheated oven at 180 ° C and cook for 20-25 minutes.
